Polka Dot Cake

Single Layer Blue and Green Polka Dot Fondant Cake.

This is my first fondant cake. My daughter wanted a fondant cake for her 18th birthday. After pricing cakes in the area I decided to investigate how to do it myself. I had tasted store bought fondant before and wasn’t too excited about using it for her cake. So I searched for a wonderful marshmallow fondant recipe and other helpful hints on the internet. I love the recipe and the way it makes my cakes look.

I have a friend who has done fondant before and she gave me the advice to use 2 clear pieces of heavy vinyl plastic to roll the fondant between to get it the right thickness and to make it easier to put on the cake. I used gel food coloring to make the different colors for the circles and various sized biscuit cutters to make the circles for the cake.

For the smallest circles, I resorted to using the round end of a decorating tip. I used basic fondant accessories with the side smoother and pizza cutter. I also used bought butter cream icing instead of homemade for the crumb layer.
